Does an implement count as an ingredient? There’s only two ingredients to make bean dip. But I would have a hard time making it without the Cuisinart immersion blender that I got for Christmas some time ago. All I have to do to make really good refritos is pour off the top centimeter of liquid in the can of beans and stick in the stick blender. It’s a perfect fit for the size of can. It churns down through the beans and purées them to a pulp.
Ingredients:
1 15.5 oz can of pinto beans
2 tbsp salsa
1/2 tsp oil
1/4 cup grated cheese
Another trick I learned is that if you just put the cheese into your bean purée it has a tendency to melt into lumps and strings. But if you add a bit of oil, it thins it out and gets the cheese incorporated smoothly. Add all ingredients and cook over medium low heat until bubbly. Reduce heat and stir constantly for 5 more minutes. Look for the bean mixture to start accumulating on the stirring spoon instead of running off as an indicator of done-ness.
